Ingredients

Scale

Vegetables

  • 1/2 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 5 cups cubed sweet potatoes
  • 3 garlic cloves, minced

Protein and Dairy

  • 1 pound turkey sausage
  • 10 eggs
  • 1/2 cup milk (plant-based milk can be substituted)
  • 1/2 cup grated mozzarella cheese

Other

  • 2 tablespoons avocado oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat Oven and Prepare the Baking Dish: Preheat your oven to 350°F (175°C). While the oven is heating, chop all vegetables. Grease a 9×13-inch casserole dish to prevent sticking during baking.
  2. Cook the Vegetables: Heat avocado oil in a Dutch oven or large saucepan until hot. Add chopped onion, green bell pepper, and sweet potatoes; cook for 8-9 minutes, stirring occasionally until vegetables soften. Add minced garlic in the last 1-2 minutes. Remove vegetables and spread evenly in the prepared casserole dish.
  3. Cook the Sausage: In the same pan, sauté turkey sausage until fully cooked, breaking into small pieces as it cooks. Add cooked sausage to the vegetables in the casserole dish and stir to combine.
  4. Prepare the Egg Mixture: In a mixing bowl, whisk together eggs, milk, dried thyme, salt, pepper, and grated mozzarella cheese until smooth.
  5. Combine and Bake: Pour the egg mixture evenly over the vegetable and sausage mixture in the casserole dish. Gently stir to distribute the egg evenly. Bake in the preheated oven for 40-45 minutes or until the center is firm. Cover loosely with foil halfway through baking if the top browns too quickly.
  6. Cool and Serve: Remove casserole from oven and let it cool for about 15 minutes before cutting and serving. This resting time helps flavors settle and makes serving easier. Enjoy your satisfying breakfast casserole!

Notes

  • Plant-based milk can replace dairy milk for a dairy-free version.
  • Use turkey sausage without added sugars or fillers for a healthier option.
  • If using regular sausage, adjust cooking time accordingly.
  • You can add other vegetables like spinach or mushrooms for extra nutrition.
  • Covering with foil halfway during baking prevents over-browning.
  • Let the casserole cool before slicing for clean portions.
  • Store leftovers in the refrigerator for up to 3 days or freeze for longer storage.
