Ingredients

Scale

Meat

  • 16 Ounces Italian Sausage

Vegetables

  • 1/2 Onion, chopped
  • 3 Carrots, chopped
  • 4 Cloves Garlic, minced
  • 3 Cups Kale, chopped

Liquids & Canned Goods

  • 4 Cups Chicken Broth
  • 28 Ounce Can of Crushed Tomatoes (with juices)
  • 1 Cup Heavy Cream

Pasta

  • 2 Cups Cheese Tortellini

Seasonings

  • Salt & Pepper, to taste

Instructions

  1. Brown the Sausage: In a large soup pot or Dutch oven, add the hot Italian sausage and sauté over medium-high heat until fully browned, about 5-10 minutes. Once browned, transfer the sausage to a paper towel-lined plate to drain excess grease.
  2. Sauté Vegetables: In the same pot, keeping the browned bits and sausage grease for flavor, add the chopped onion and carrots. Cook for 3-5 minutes until softened, then add the minced garlic and sauté for another 1 minute to release its aroma.
  3. Add Liquids and Sausage: Pour in the chicken broth and the entire can of crushed tomatoes along with their juices. Return the browned sausage to the pot. Turn the heat to high and bring the soup to a rolling boil.
  4. Simmer with Tortellini and Kale: Once boiling, add the cheese-filled tortellini, chopped kale, and heavy cream. Reduce the heat to a gentle simmer and cook for 10 minutes until the tortellini are tender and the kale has wilted.
  5. Season and Serve: Taste the soup and season with salt and pepper as desired. Serve hot and enjoy this comforting Italian-inspired soup.

Notes

  • For a lighter option, substitute heavy cream with half-and-half or milk, but this may affect the creaminess of the soup.
  • Italian sausage can be spicy or mild—choose based on your preference to control the heat level.
  • You can use fresh or frozen kale; just make sure to wash fresh kale thoroughly before chopping.
  • Leftover soup stores well in the refrigerator for up to 3 days and freezes nicely as well.
  • If you prefer a thicker soup, let it simmer uncovered for a few extra minutes before adding the cream.
