These Easy Hot Honey Chicken Sliders are a perfect blend of sweet and spicy flavors layered with tender shredded rotisserie chicken, melted provolone cheese, and a crunchy coleslaw topping, all sandwiched between soft Hawaiian rolls. Slider Assembly

  • 24 Hawaiian rolls
  • 5 cups rotisserie chicken, shredded
  • 12 slices provolone cheese
  • Hot honey sauce (a double recipe, about 1 cup)

Seasoned Butter Mixture

  • 4 tbsp butter
  • ¼ tsp cayenne pepper
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • ⅛ tsp smoked paprika

Coleslaw

  • 4 cups shredded coleslaw mix
  • ½ cup coleslaw dressing (or ranch, plus more if needed)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly spray a baking pan with nonstick spray to prevent sticking.
  2. Prepare the Rolls: Without separating the rolls, use a long serrated knife to carefully slice the entire pack of Hawaiian rolls in half horizontally, keeping all buns intact in their original shape. Place the bottom halves evenly in the prepared pan, gently pressing them to fit snugly.
  3. Layer Cheese and Chicken: Lay the provolone cheese slices evenly over the bottom buns. In a bowl, mix the shredded rotisserie chicken thoroughly with the hot honey sauce. Spread this spicy-sweet chicken mixture evenly over the cheese layer. Bake uncovered for 15 minutes to melt the cheese and warm the chicken.
  4. Add the Tops and Butter: Place the top halves of the rolls over the chicken layer. In a small bowl, combine the softened butter with cayenne, salt, garlic powder, and smoked paprika. Brush this seasoned butter mixture generously over the top of the rolls. Return the sliders to the oven and bake for an additional 15-20 minutes until golden and heated through.
  5. Prepare the Coleslaw and Finish: While the sliders bake, toss the shredded coleslaw mix with coleslaw dressing or ranch until adequately coated; add more dressing if needed to reach your desired consistency. Once the sliders are done baking, carefully remove the top buns and spread the coleslaw evenly over the chicken layer. Replace the top buns and, if you like, brush them again with some of the reserved butter mixture for extra flavor and shine.

Notes

  • To make the hot honey sauce, combine honey with hot sauce to your preferred heat level if you don’t have a ready-made version.
  • If you prefer a milder slider, reduce or omit the cayenne pepper in the butter mixture.
  • Coleslaw can be made a few hours ahead for convenience but toss it with dressing just before assembling to prevent sogginess.
  • These sliders can be kept warm by covering with foil after baking if not serving immediately.
