Zucchini Boats:

  • 4 medium zucchinis, halved lengthwise and scooped out to create “boats”

Beef Filling:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt & pepper to taste

Instructions

  1. Prepare the Zucchini: Preheat the oven to 375°F (190°C). Slice the zucchinis in half lengthwise, scoop out the center, brush with olive oil, pre-bake for 5-7 minutes.
  2. Cook the Beef Filling: Sauté onion, garlic, add ground beef, cook until browned. Drain fat, add tomato sauce, seasoning, salt, and pepper. Simmer for 5 minutes.
  3. Assemble & Bake: Fill zucchini boats with beef mixture, top with cheese. Bake for 15 minutes until cheese is melted.
  4. Serve & Enjoy: Garnish with fresh herbs, serve hot with sides.
