Meat and Vegetables

  • 1 pound ground burger
  • 1 small yellow onion, diced
  • 1 russet potato, peeled and diced
  • 15 oz can of corn, drained
  • 15 oz can of peas, drained
  • 14.5 oz can of sliced carrots, drained
  • 14.5 oz can of cut green beans, drained

Liquids and Seasoning

  • 32 oz beef broth
  • 10.75 oz can tomato soup
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the ground burger and onions. In a medium soup pot over medium heat, cook the ground burger and diced onions together until no pink remains in the meat. Drain the grease thoroughly to avoid excess fat in the soup.
  2. Add remaining ingredients. To the pot with cooked beef and onions, add the diced russet potato, beef broth, tomato soup, corn, peas, sliced carrots, cut green beans, and Italian seasoning. Stir to combine all ingredients evenly.
  3. Simmer the soup. Bring the soup to a boil over medium-high heat, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes or until the potatoes are fork tender. Season with salt and pepper to taste.
  4. Serve warm. Ladle the soup into bowls and serve warm, ideally with a peanut butter sandwich or crackers for a complete meal.

  • You can substitute the peeled and diced russet potato with a 14.5 oz can of diced potatoes for convenience.
