For the shrimp:
- 2 tsp sea salt
- Juice from half a lemon
- Large pot of boiling water
- 2 lbs shrimp, cleaned with tails and veins removed
- Ice bath
Ingredients for the Hot Dog Buns:
- 8 hot dog buns
- 1 tsp butter per bun
For the dressing mix:
- 1 cup mayonnaise
- 1 cup diced celery
- 1/2 cup chopped green onions (Bottoms)
- 1/3 cup chopped dill
- 1/4 cup chopped chives
- 1/4 cup chopped parsley
- 2 tsp chopped capers
- 2 Tbsp Dijon mustard
- 1 Tbsp red wine vinegar
- Zest of 1 lemon
- 4 cloves garlic, grated or pressed
- 1 tsp paprika
- 1/2 tsp garlic salt
- 1/4 tsp onion powder
- 1/2 tsp sea salt
- Fresh Cracked Pepper
- Boil the Shrimp: Boil a large pot of water with sea salt and lemon juice. Add cleaned shrimp and cook for 2-3 minutes. Transfer to an ice bath.
- Prepare Dressing: Mix mayonnaise, celery, green onions, dill, chives, parsley, capers, mustard, vinegar, lemon zest, garlic, paprika, garlic salt, onion powder, salt, and pepper in a bowl.
- Toast Hot Dog Buns: Butter the buns inside and broil for 1-2 minutes until golden.
- Combine: Chop the shrimp, add to the dressing, and mix well. Stuff the toasted buns with the shrimp mixture.
- Finish: Garnish with lemon juice, sea salt, pepper, and parsley before serving.
