Ingredients

Dried Lentils

  • 1 cup dried lentils

Sweet Potato

  • 1 sweet potato, chopped

Celery

  • 1 cup celery, chopped

Carrots

  • 1 cup carrots, chopped

Onion

  • 1 small/medium onion, diced

Garlic

  • 4 cloves garlic, diced

Broth

  • 4 cups broth (vegetable or chicken)

Crushed Tomatoes

  • 1 (24 oz) can crushed tomatoes

Salt

  • 1 teaspoon salt

Pepper

  • Fresh cracked pepper, to taste

Turmeric

  • 1 teaspoon turmeric

Red Pepper Flakes

  • ½ teaspoon red pepper flakes

Balsamic Vinegar

  • 2.5 tablespoons balsamic vinegar

Parmesan Cheese

  • ⅓ cup grated Parmesan cheese (optional)

Parsley

  • ¼ cup parsley, chopped, plus more for garnish

Kale

  • 1 cup kale, roughly chopped

Instructions

  1. Prepare Ingredients: Rinse lentils under cold water and drain.
  2. Combine in Crockpot: Add lentils, sweet potato, celery, carrots, onion, garlic, broth, crushed tomatoes, salt, pepper, turmeric, and red pepper flakes to the crockpot.
  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until lentils and vegetables are tender.
  4. Add Vinegar and Kale: About 30 minutes before serving, stir in balsamic vinegar and kale. Continue cooking until kale is wilted.
  5. Finish and Serve: Stir in grated Parmesan cheese if using. Garnish with additional chopped parsley. Serve hot.
