Pasta Salad:
- 1 16oz box of pasta (shape of choice)
- 1 cup mini cucumbers, diced
- 1 red onion, diced
- 1/4 cup goat cheese, crumbled
Dressing:
- 1–2 lemons, juiced
- 1/4 cup olive oil
- 1 tbsp oregano
- 1/2 tsp garlic powder
- Salt & pepper to taste
- Cook the Pasta: Cook pasta according to package directions and let cool.
- Prepare the Salad: In a large bowl, combine pasta, cucumber, onion, and goat cheese.
- Make the Dressing: In a separate small bowl, combine lemon juice, olive oil, oregano, and garlic powder. Mix well.
