Vegetables & Herbs
- ½ medium onion, diced
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 3 garlic cloves, minced
- ¼ cup fresh chopped parsley or cilantro
- 1 medium avocado, cut into chunks
Protein
Pantry & Seasonings
- 2 tbsp olive oil
- 2 chipotle peppers, chopped
- 6 cups chicken broth
- 1 tbsp tomato paste
- ½ tbsp cumin
- 1 tbsp fresh lime juice
- Salt and pepper, to taste
- Sauté the Vegetables: Heat the olive oil over medium heat in a large pot. Add the diced onion, chopped celery, and chopped bell pepper. Season with salt and pepper. Sauté the vegetables until they are softened, about 5 minutes, stirring occasionally to prevent burning.
- Add Garlic and Chipotle Peppers: Stir in the minced garlic and chopped chipotle peppers. Cook for about one minute, allowing the flavors to meld and the garlic to become fragrant.
- Add Tomato Paste, Spices and Chicken: Mix in the tomato paste and cumin until well combined. Add the two whole chicken breasts to the pot along with the chicken broth. Stir everything together and bring the soup to a boil.
- Simmer the Soup: Reduce the heat to medium-low and let the soup simmer gently for about one hour. This allows the chicken to cook fully and the flavors to develop deeply.
- Shred the Chicken: Remove the chicken breasts from the pot and place them on a large plate. Using two forks, shred the meat finely. Return the shredded chicken back into the soup pot. Stir in fresh lime juice and chopped parsley or cilantro to brighten the soup’s flavor.
- Serve: Ladle the soup into bowls and top each serving with fresh chunks of avocado for a creamy, cool contrast to the smoky, spicy broth. Serve immediately and enjoy!
Notes
- Adjust chipotle peppers quantity to control the spiciness.
- Use fresh lime juice for vibrant citrus flavor; bottled lime juice can be used in a pinch but fresh is preferred.
- Substitute cilantro for parsley if preferred for a different herbaceous note.
- For a thicker soup, remove some broth before adding chicken back and blend with vegetables, then return to pot.
- Great served with warm crusty bread or tortilla chips for dipping.
