Cookie Dough:

  • 3/4 cup brown sugar (light or dark)
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 and ½ cups all-purpose flour, sifted
  • 1/2 cup Hershey’s special dark cocoa powder
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking soda
  • 1/8 teaspoon salt (optional)

Instructions

  1. Cream Butter and Sugar: In the bowl of a stand mixer, combine butter and sugar. Mix until light and fluffy, about 3 minutes.
  2. Add Egg and Vanilla: Mix in the egg and vanilla for another 2 to 3 minutes.
  3. Incorporate Dry Ingredients: Scrape down the sides of the bowl and add the remaining dry ingredients. Mix on low until just combined, about 1 to 2 minutes.
  4. Chill Dough: Cover and refrigerate the dough for at least an hour.
  5. Preheat Oven: Preheat the oven to 350°F.
  6. Shape and Bake: Scoop cookie dough onto a lined baking sheet, flatten slightly, and bake for 8 to 9 minutes until set.
