Bread:

  • 16 slices high-quality soft white sandwich bread (about 1 loaf), crusts removed

Filling:

  • 1 English cucumber
  • 8 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon minced fresh dill
  • 1 tablespoon minced fresh chives
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon coarse salt
  • Cracked black pepper, to taste

Instructions

  1. Prepare Cucumber: Thinly slice the English cucumber and place slices on paper towels to absorb excess moisture. Set aside.
  2. Make Filling: In a medium bowl, combine softened cream cheese, mayonnaise, dill, chives, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and well blended.
  3. Assemble Sandwiches: Spread the cream cheese mixture evenly over each slice of bread. Layer cucumber slices evenly over half of the bread slices. Top with the remaining bread slices to form sandwiches. Press sandwiches gently, then cut each into halves or quarters as desired.
