Cream Cheese Spread:

  • 8 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 2 teaspoons fresh dill, chopped
  • 1 teaspoon fresh green onions, chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Salt & pepper to taste

Additional:

  • 1 long English cucumber, thinly sliced
  • 1 loaf sliced bread, crusts removed

Instructions

  1. Prepare Cream Cheese Spread: Using a hand mixer, blend cream cheese and mayonnaise until smooth. Add herbs, garlic powder, onion powder, lemon juice, and zest. Season with salt and pepper.
  2. Assemble Sandwiches: Spread the cream cheese mixture onto bread slices. Layer cucumber slices on half of the bread. Optionally, add more herbs. Top with remaining bread slices.
  3. Finalize and Serve: Trim crusts off the sandwiches and cut each into three pieces using a sharp knife. Enjoy immediately or refrigerate in an airtight container for up to 24 hours.
