Ingredients

Scale

Meat and Vegetables

  • 1 lb ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced

Beans and Canned Goods

  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes

Spices and Seasonings

  • 2 tsp chili powder
  • 1 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Brown the turkey and onion: In a skillet over medium heat, brown the ground turkey together with the chopped onion, stirring occasionally until fully cooked and onions become translucent. Drain any excess fat to keep the chili lean and healthy.
  2. Combine ingredients in crockpot: Transfer the browned turkey and onion to the crockpot. Add the pumpkin puree, drained black beans, diced tomatoes, minced garlic, chili powder, cinnamon, salt, and pepper. Stir thoroughly to blend all ingredients evenly.
  3. Slow cook the chili: Cover the crockpot and cook on low heat for 6 to 8 hours, or on high heat for 4 hours. This slow cooking process allows the flavors to meld beautifully and the turkey to become tender.
  4. Serve and garnish: Once cooked, ladle the chili into bowls. Optionally, garnish with a dollop of sour cream and freshly chopped cilantro for added creaminess and a pop of color. Enjoy warm for a comforting meal.

Notes

  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • For a spicier chili, add jalapeños or cayenne pepper to taste.
  • If you want a thicker chili, cook uncovered for the last 30 minutes to reduce excess liquid.
  • This chili freezes well and can be stored in an airtight container for up to 3 months.
  • To make it vegan, substitute turkey with plant-based ground meat and omit sour cream or use a dairy-free alternative.
