Ingredients

Scale

Chicken and Broth Base

  • 4 medium chicken breasts
  • 4 cups chicken broth
  • 4 cups vegetable broth

Vegetables and Flavorings

  • 2 large carrots, peeled and sliced
  • 2 sticks celery, chopped finely
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon Italian seasoning
  • 3 bay leaves

Finishing Ingredients

  • Juice from 1 lemon
  • 1 handful fresh parsley, chopped
  • 1 cup uncooked orzo
  • Salt and pepper, to taste

Instructions

  1. Prepare Ingredients: Begin by gathering all the main ingredients except the lemon juice, parsley, orzo, salt and pepper. Peel and slice the carrots, finely chop the celery, and mince the garlic.
  2. Load the Slow Cooker: Place the chicken breasts, sliced carrots, chopped celery, minced garlic, dried basil, Italian seasoning, bay leaves, chicken broth, and vegetable broth into the slow cooker. Make sure everything is well distributed.
  3. Cook the Soup: Set your slow cooker to low heat and cook for 6-8 hours or set it to high heat and cook for 3-4 hours. This slow cooking will create tender chicken and develop deep flavors in the broth.
  4. Prepare to Finish: About 30 minutes before serving, remove the bay leaves from the slow cooker. Take the chicken breasts out and shred them using two forks.
  5. Add Final Ingredients: Return the shredded chicken to the slow cooker. Add the lemon juice, chopped parsley, and uncooked orzo. Increase the slow cooker’s heat to high to cook the orzo.
  6. Cook Orzo and Stir: Stir the soup every 10 minutes to prevent the orzo from sticking to the slow cooker. Continue cooking until the orzo is tender, approximately 20-30 minutes.
  7. Season and Serve: Taste the soup and season with salt and pepper as needed. Serve hot and enjoy your fresh, homemade lemon chicken orzo soup.

Notes

  • You can substitute all vegetable broth for all chicken broth if preferred.
  • Stirring during the orzo cooking is essential to prevent sticking and burning at the bottom of the slow cooker.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a thicker soup, reduce the broth quantity slightly before adding orzo.
  • Adding lemon juice at the end keeps the soup fresh and vibrant.
