Chicken and Broth Mix
- 1¼ cups evaporated milk
- ¾ cup chicken broth
- 1 cube chicken bouillon
- ¾ teaspoon poultry seasoning
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- 1½ pounds boneless skinless chicken breasts
Thickening and Finishing
- 2 tablespoons cornstarch
- 2 tablespoons cold water (for cornstarch slurry)
- 1 tablespoon butter
- Prepare broth mixture: In a medium bowl, whisk together the evaporated milk, chicken broth, chicken bouillon cube, poultry seasoning, onion powder, garlic powder, and black pepper until well combined.
- Add chicken to slow cooker: Place the boneless skinless chicken breasts into a 6-quart slow cooker. Pour the prepared broth mixture evenly over the chicken.
- Cook chicken: Cover the slow cooker with its lid and cook on LOW for 5 to 6 hours, or on HIGH for 2 to 3 hours, until the chicken is tender and fully cooked through.
- Make gravy thicker: Carefully remove the cooked chicken from the slow cooker and set aside. In a small bowl, whisk the cornstarch together with 2 tablespoons of cold water to make a slurry. Stir this slurry into the liquid remaining in the slow cooker.
- Thicken gravy: Turn the slow cooker to HIGH and cook the liquid for an additional 10 to 15 minutes, stirring occasionally, until the gravy is thickened to your liking.
- Finish gravy: Whisk the butter into the thickened gravy until melted and smooth. Taste and season with additional salt and black pepper if necessary.
- Combine and serve: Shred or slice the reserved chicken and return it to the slow cooker, mixing it gently into the creamy gravy. Serve hot.
Notes
- You can substitute chicken breasts with thighs if preferred for juicier meat.
- For extra flavor, add fresh herbs like thyme or rosemary to the slow cooker before cooking.
- Serve this chicken and gravy over mashed potatoes, rice, or egg noodles for a complete meal.
- Use gluten-free cornstarch if needed to make the recipe gluten-free.
- Make sure to stir the gravy occasionally when thickening to prevent lumps.
