Ingredients

Scale

Chicken

  • 4 chicken breasts, skin on or skinless
  • 2 tsp Italian seasoning
  • Salt and pepper, to taste

Searing

  • 1 tbsp unsalted butter
  • 1 tsp olive oil (optional)

Sauce and Seasoning

  • ½ cup (120ml) white wine + ½ cup water OR 1 cup (240ml) chicken broth
  • 4 tbsp diced sun-dried tomatoes (drained)
  • 1 tsp sweet paprika
  • 1 tsp garlic granules
  • 1 tsp chicken bouillon (if using wine)

Finishing

  • 1 cup (225g) sour cream or heavy cream
  • 1 tbsp cornstarch diluted in 2 tbsp cold water (optional)
  • 23 tbsp grated Parmesan cheese
  • 2 tbsp flat leaf parsley or fresh basil, chopped

Instructions

  1. Season the chicken: Pat the chicken breasts dry and season them evenly with salt, pepper, and Italian seasoning to ensure the flavors penetrate the meat.
  2. Sear the chicken: Heat the butter and olive oil (if using) in a pan or directly in the slow cooker if it has a browning function. Place the chicken breasts skin side down and cook until golden brown to lock in juices and add flavor.
  3. Add liquids and seasonings: Turn the chicken over and transfer to the slow cooker if you seared it in a pan. Pour in the white wine and water, or chicken broth if preferred. Sprinkle paprika, garlic granules, and chicken bouillon (if using wine), and add the diced sun-dried tomatoes to the pot.
  4. Slow cook the chicken: Cover and cook on the LOW setting for 90 minutes to 2 hours, or until the chicken reaches an internal temperature of 165°F (75°C), ensuring it is fully cooked and tender.
  5. Thicken the sauce (optional): About 10 minutes before the cooking time ends, stir in the cornstarch slurry if you want to thicken the sauce. This step is optional, especially if using sour cream which will also enrich the sauce.
  6. Finish the sauce: Push the chicken to one side of the crock pot, then stir in the sour cream or heavy cream until fully incorporated, followed by the grated Parmesan and chopped parsley or basil for freshness and richness.
  7. Serve: Plate the chicken with your choice of sides such as rice, noodles, or mashed potatoes, spooning plenty of the creamy sauce over the top for a delicious meal.

Notes

  • You can use skinless or skin-on chicken breasts depending on your preference.
  • If using wine, add chicken bouillon for extra flavor; omit if using chicken broth.
  • The cornstarch slurry is optional and helps thicken the sauce; sour cream also acts as a thickener.
  • For a dairy-free version, use coconut cream and skip the Parmesan.
  • Ensure the internal temperature of chicken reaches 165°F (75°C) for safe consumption.
  • Fresh herbs like parsley or basil add brightness and are recommended as a final garnish.
  • This dish pairs well with starchy sides to soak up the creamy sauce.
