Ingredients

Scale

Meat

  • 23 boneless, skinless chicken breasts (or thighs)

Vegetables and Aromatics

  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced

Liquids and Dairy

  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream

Pantry

  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (14.5 oz) can crushed tomatoes
  • 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
  • Salt and pepper to taste

Cheese and Garnish

  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the crock pot: Place raw chicken breasts or thighs in the bottom of the crock pot to serve as the protein base for the soup.
  2. Add aromatics and seasonings: Add the finely chopped onion, minced garlic, Italian seasoning, and crushed red pepper flakes (if using) over the chicken for flavor layering.
  3. Pour in liquids and tomatoes: Add the canned crushed tomatoes and pour 4 cups of low-sodium chicken broth over all the ingredients to create the soup base.
  4. Cook the soup: Cover the crock pot and cook on low heat for 6–7 hours or on high for 3–4 hours, allowing the chicken to become tender and flavors to meld.
  5. Shred the chicken: Carefully remove the cooked chicken from the crock pot and shred it using two forks, then return the shredded chicken to the crock pot.
  6. Add the cream: Stir in 1 cup of heavy cream to add richness and a silky texture to the soup broth.
  7. Thicken the soup (optional): If a thicker consistency is desired, combine 2 tablespoons of cornstarch with 2 tablespoons of cold water to make a slurry and stir it into the soup.
  8. Incorporate the Parmesan cheese: Gradually add 1 cup of freshly grated Parmesan cheese to the soup, stirring constantly until the cheese is completely melted and the soup is creamy.
  9. Final simmer: Cook the soup uncovered on low heat for an additional 20–30 minutes to allow the flavors to fully develop and the soup to thicken.
  10. Season and garnish: Season the soup with salt and freshly ground pepper to taste, then sprinkle chopped fresh parsley on top before serving for a fresh finish.

Notes

  • You can substitute chicken thighs for breasts for more moist and flavorful meat.
  • If you prefer a spicier soup, increase the amount of crushed red pepper flakes.
  • The cornstarch slurry is optional and used to thicken the soup if desired.
  • For a lighter version, substitute heavy cream with half-and-half or whole milk.
  • Freshly grated Parmesan cheese is preferred over pre-grated for better melting and flavor.
  • Garnish with additional Parmesan cheese or serve with crusty bread for a complete meal.
