Ingredients

Scale

Egg Mixture

  • 4 large eggs (chicken or duck)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup finely chopped fresh vegetables (carrots, bell peppers, cucumbers)

Wrap and Filling

  • 8 rice paper wrappers
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves

For Cooking and Serving

  • 2 tablespoons vegetable oil or other neutral oil for frying
  • Low-sodium soy sauce for dipping

Instructions

  1. Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined. Stir in the finely chopped fresh vegetables to add texture and freshness to the filling.
  2. Soak Rice Paper Wrappers: Fill a large shallow dish with warm water. Dip each rice paper wrapper into the water and soak for 10 to 15 seconds until it becomes pliable but not too soft to handle.
  3. Assemble Wraps: Lay the softened rice paper wrapper on a clean, flat surface. Spoon a portion of the egg and vegetable mixture onto the bottom third of the wrapper. Top with a few fresh cilantro and mint leaves.
  4. Fold and Roll: Fold the left and right sides of the wrapper over the filling, then carefully roll from the bottom up, keeping it tight and securing the filling inside.
  5. Cook the Wraps: Heat the vegetable oil in a non-stick skillet over medium heat. Place the wraps seam-side down in the skillet and cook for 3 to 4 minutes until golden brown and crispy. Flip and cook the other side for another 3 to 4 minutes.
  6. Serve: Remove the wraps from the skillet and place on paper towels to drain any excess oil. Serve warm with low-sodium soy sauce as a dipping sauce.

Notes

  • For extra flavor, you can add finely minced garlic or green onions into the egg mixture.
  • Ensure not to over-soak the rice papers as they can become difficult to roll and tear easily.
  • Duck eggs can be used for a richer taste, but chicken eggs work well too.
  • Wraps are best served immediately while crispy but can be reheated in a skillet to regain crispiness.
  • Use fresh herbs generously as they brighten the flavors of the wrap.
