Seasonings:

  • ½ teaspoon onion powder

Chicken Filling:

  • 2 ¾ cups shredded chicken
  • 1 ½ cups shredded Monterey Jack cheese, divided
  • 1 teaspoon hot sauce
  • 1 tablespoon lime juice

White Sauce:

  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 1 ¾ cups chicken broth
  • 1 (4 oz.) can diced green chiles, undrained
  • ¾ cup sour cream, at room temp
  • 3 tablespoons cream cheese, cubed and softened
  • 1 tablespoon finely chopped cilantro

Assembly:

  • 8 8-inch flour tortillas
  • 2 cups shredded Pepper Jack cheese

Garnishes:

  • Roma tomatoes
  • Green onions
  • Red onions
  • Jalapenos
  • Cilantro

Instructions

  1. Prepare Seasonings: Combine the seasonings in a small bowl and set aside.
  2. Preheat Oven: Preheat oven to 350°F.
  3. Make Chicken Filling: Mix shredded chicken, ½ cup Monterey Jack cheese, hot sauce, lime juice, and 1 teaspoon of seasoning mixture in a bowl.
  4. Prepare White Sauce: Melt butter in a skillet, sauté garlic, add flour, then gradually stir in chicken broth, seasonings, green chiles, sour cream, cream cheese, and cilantro. Stir in remaining Monterey Jack cheese.
  5. Assemble Enchiladas: Spread enchilada sauce in a baking dish, fill tortillas with chicken mixture, roll up, and place in dish. Top with sauce and Pepper Jack cheese.
  6. Bake: Cover and bake for 12 minutes, then uncover and bake for an additional 15 minutes. Broil for 1-2 minutes to brown the top. Let rest before serving with garnishes.

Notes

  • Feel free to adjust the level of spiciness by adding more or less hot sauce.
