Seasonings:
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon chili powder
Chicken Filling:
- 2 ¾ cups shredded chicken
- 1 ½ cups shredded Monterey Jack cheese, divided
- 1 teaspoon hot sauce
- 1 tablespoon lime juice
White Sauce:
- 3 tablespoons butter
- 3 cloves garlic, minced
- 2 tablespoons flour
- 1 ¾ cups chicken broth
- 1 (4 oz.) can diced green chiles, undrained
- ¾ cup sour cream, at room temp
- 3 tablespoons cream cheese, cubed and softened
- 1 tablespoon finely chopped cilantro
Assembly:
- 8 8-inch flour tortillas
- 2 cups shredded Pepper Jack cheese

- Prepare Seasonings: Combine the seasonings in a small bowl and set aside.
- Preheat Oven: Preheat oven to 350°F.
- Make Chicken Filling: Mix shredded chicken, ½ cup Monterey Jack cheese, hot sauce, lime juice, and 1 teaspoon of seasoning mixture in a bowl.
- Prepare White Sauce: Melt butter in a skillet, sauté garlic, add flour, then gradually stir in chicken broth, seasonings, green chiles, sour cream, cream cheese, and cilantro. Stir in remaining Monterey Jack cheese.
