For the Chicken:
- 2 large boneless, skinless chicken breasts (or 4 small)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
For the Orzo and Sauce:
- 3 cloves garlic, minced
- 1 cup orzo pasta
- ½ cup sun-dried tomatoes, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- ½ teaspoon red pepper flakes (optional)
- 1 tablespoon butter
- Cook the Chicken: Pat the chicken dry and season both sides. Sear in olive oil until cooked. Set aside.
- Prepare the Orzo and Sauce: Sauté garlic, toast orzo, add tomatoes and broth, cook orzo, add cream and cheese, stir in spinach, return chicken to pan, simmer.
- Serve: Garnish with Parmesan and serve warm.
