For the Chicken:

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

For the Orzo and Sauce:

  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Cook the Chicken: Pat the chicken dry and season both sides. Sear in olive oil until cooked. Set aside.
  2. Prepare the Orzo and Sauce: Sauté garlic, toast orzo, add tomatoes and broth, cook orzo, add cream and cheese, stir in spinach, return chicken to pan, simmer.
  3. Serve: Garnish with Parmesan and serve warm.

Notes

  • You can adjust the level of red pepper flakes to suit your spice preference.
  • Feel free to add more fresh herbs like basil or parsley for extra flavor.
