Scale

Soup Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped (white or yellow preferred)
  • 23 cloves garlic, minced
  • 1 lb ground beef (lean if preferred)
  • 1 red bell pepper, diced
  • 1 large tomato, chopped
  • 1/2 jalapeno, chopped (seeds removed for less spice, optional)
  • 1 cup heavy cream (can substitute with plain Greek yogurt for lower carb)
  • 2 tbsp taco seasoning
  • Salt and black pepper, to taste
  • 1 1/2 cups beef broth (or other broth of choice)

Garnish (Optional)

  • Fresh cilantro, chopped (or parsley)
  • Avocado, sliced or guacamole
  • Mozzarella cheese, shredded (or cheddar, pepper Jack, or mix)
  • Jalapeno, sliced
  • Lime, juiced and sliced

Instructions

  1. Heat the pot: Grab a large pot and heat it over medium-high heat. Add the olive oil and the finely chopped onion.
  2. Sauté onions: Cook the onions for 3-5 minutes until golden brown, being careful not to overcook to avoid bitterness.
  3. Add garlic and beef: Add minced garlic and ground beef to the pot.
  4. Brown the beef: Break apart the ground beef, stir thoroughly, and cook for 7-8 minutes until browned and fully cooked.
  5. Add vegetables and seasonings: Mix in the diced bell pepper, chopped tomato, jalapeno, heavy cream, taco seasoning, salt, and black pepper.
  6. Cook mixture: Stir well and cook for another 4-5 minutes until tomatoes soften and ingredients are well combined.
  7. Add broth: Pour in the beef broth and mix everything thoroughly.
  8. Simmer soup: Reduce heat to low, cover with a lid, and let the soup simmer for 15-20 minutes to thicken and meld flavors.
  9. Serve and garnish: Ladle soup into bowls and top with optional garnishes such as cilantro, avocado slices, shredded mozzarella, sliced jalapeno, and fresh lime juice and slices.

Notes

  • Use lean ground beef for a lower calorie and fat content.
  • To reduce spiciness, remove seeds from jalapeno or omit it entirely; chipotle powder can be used for smoky heat instead.
  • Substitute heavy cream with plain Greek yogurt for a higher protein and lower carb option.
  • Taco seasoning is essential for authentic flavor; do not skip it.
  • Serve soup in hollowed-out bread bowls for a hearty presentation, though this adds extra carbs.
  • For a low-carb variation, serve with cauliflower rice instead of traditional rice or bread.
  • Crunchy toppings like crushed tortilla chips, crispy bacon, or fried onions add delightful texture.
