Sauce:
- 1 red bell pepper (raw or roasted)
- 1/2 cup water
- 1/2 cup raw cashews or macadamia nuts
- 1/4 cup nutritional yeast or Parmesan cheese
- 1 tsp salt
- 2 tsp onion powder
- 1/2 tsp ground turmeric
- 1/8 tsp ground nutmeg (optional)
Additional:
- 10 oz pasta or spaghetti squash or vegetables
- optional grilled or roasted veggies, beans, etc.
- Soak Nuts: Place the nuts in a cereal bowl, cover with water, and let sit 6-8 hours. Drain fully, and pat dry.
- Prepare Sauce: Blend all sauce ingredients (including the half cup water) until smooth.
- Cook Pasta: Cook pasta in salted water according to package directions.
- Heat Sauce: Heat the sauce in a pot until desired temperature while the pasta cooks.
- Combine: Drain pasta and pour the sauce over it. Season and add cooked veggies, beans, etc. if desired. Stir well.

- You can roast the red bell pepper for a deeper flavor.
