Sauce:

  • 1 red bell pepper (raw or roasted)
  • 1/2 cup water
  • 1/2 cup raw cashews or macadamia nuts
  • 1/4 cup nutritional yeast or Parmesan cheese
  • 1 tsp salt
  • 2 tsp onion powder
  • 1/2 tsp ground turmeric
  • 1/8 tsp ground nutmeg (optional)

Additional:

  • 10 oz pasta or spaghetti squash or vegetables
  • optional grilled or roasted veggies, beans, etc.

Instructions

  1. Soak Nuts: Place the nuts in a cereal bowl, cover with water, and let sit 6-8 hours. Drain fully, and pat dry.
  2. Prepare Sauce: Blend all sauce ingredients (including the half cup water) until smooth.
  3. Cook Pasta: Cook pasta in salted water according to package directions.
  4. Heat Sauce: Heat the sauce in a pot until desired temperature while the pasta cooks.
  5. Combine: Drain pasta and pour the sauce over it. Season and add cooked veggies, beans, etc. if desired. Stir well.

Notes

  • You can roast the red bell pepper for a deeper flavor.
  • Adjust seasoning and consistency of the sauce to your preference.
