Instructions

  1. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for 6-7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Cook the Gnocchi: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the potato gnocchi and cook for 3-4 minutes, stirring occasionally, until the gnocchi pieces are golden brown on the edges. Remove the gnocchi from the skillet and set aside.
  3. Make the Sauce: Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant but not browned. Pour in the chicken broth, scraping the bottom of the pan to loosen any browned bits. Stir in the heavy cream and Parmesan cheese, then continue cooking the sauce for 2-3 minutes or until it thickens slightly.
  4. Combine Ingredients: Return the cooked chicken and gnocchi to the skillet with the sauce. Gently toss everything to combine and ensure the chicken and gnocchi are evenly coated with the creamy sauce. If using, stir in the spinach or kale and cook for 1-2 minutes until the greens are wilted.
  5. Serve: Taste the dish and adjust seasoning with additional salt, pepper, or red pepper flakes as desired. Serve hot, garnished with extra Parmesan cheese and fresh herbs if desired for an enhanced presentation and flavor.
