Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the chicken.
  2. Prepare Skillet and Oils: Heat a large, oven-safe skillet or Dutch oven over medium heat. Add the coconut oil and olive oil to the pan and allow them to warm up.
  3. Coat Chicken: In a bowl, combine the all purpose flour and 1/4 cup chopped cilantro. Dip each chicken breast in this mixture until fully coated.
  4. Sear Chicken: Place coated chicken breasts directly into the hot skillet. Pan-sear for 3 to 4 minutes on each side until the chicken is slightly browned. When chicken is nearly cooked through, add the minced garlic and cook for about 30 seconds to release its aroma.
  5. Prepare Sauce: While the chicken is searing, in a separate bowl, mix together the coconut milk, chicken broth, brown sugar (or coconut sugar), and the juice of 1 lime.
  6. Add Sauce and Bake: Remove the skillet from heat and pour the coconut milk mixture over the seared chicken breasts. Place the skillet into the preheated oven and bake for 10 to 15 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
