This Hawaiian Banana Bread is a tropical twist on the classic recipe, featuring the flavors of pineapple, coconut, and macadamia nuts. Moist, flavorful, and perfect for breakfast or a snack!

Dry Ingredients

  • 1 1/2 cups all-purpose white flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups ripe bananas
  • 1 (8-ounce) can crushed pineapple with juice
  • 1/2 cup + 1 tbsp organic sunflower oil

Add-ins

  • 1/2 cup macadamia nuts, dry roasted & chopped
  • 1/2 cup unsweetened coconut flakes

Instructions

  1. Preheat the oven to 350 degrees. Grease your loaf pan.
  2. Dry roast your macadamia nuts for a few minutes until slightly browned. Chop them up and set aside.
  3. Combine dry ingredients – all-purpose flour, sugar, baking powder, baking soda, and salt. Mix and set aside.
  4. Combine wet ingredients – eggs, vanilla extract, bananas, crushed pineapple with juice, and oil. Mix well.
  5. Add dry ingredients to wet ingredients and mix well without overmixing.
  6. Add chopped macadamia nuts and coconut flakes to the batter. Fold gently.
  7. Pour batter into greased loaf pan and bake at 350 degrees for 55-65 minutes.
  8. Use a knife to check if the bread is cooked inside. Let it cool before slicing.

Notes

  • You can add a sprinkle of extra coconut on top before baking for a nice visual touch.
  • This bread freezes well, so you can make a double batch and save some for later.
