Ingredients

Scale

For the Toffee Base

  • 1 cup chopped pecans or almonds
  • 1 cup granulated sugar (200 grams)
  • 1 cup butter (226 grams), cut into pieces
  • 1/2 teaspoon salt
  • 1/4 cup water (60 ml)
  • 1 teaspoon vanilla extract

For Topping

  • Chocolate chips (amount as desired for topping, about 1 – 1 1/2 cups)
  • Additional chopped pecans for garnish (about 1/4 cup)
  • Flaked sea salt (optional, for sprinkling)

Instructions

  1. Prepare the Baking Dish and Pecans: Gather all ingredients. Line a 9×9 inch baking dish with parchment paper. Spread 1 cup of chopped pecans evenly on the bottom to form the base for the toffee.
  2. Make the Caramel Mixture: In a pot, combine butter, sugar, water, and salt. Heat over medium heat, stirring frequently until melted and bubbling. Attach a candy thermometer and heat until it reaches 300°F, the hard crack stage.
  3. Cook the Caramel: Stir occasionally while heating to ensure even cooking. Remove from heat promptly at 300°F and stir in vanilla extract thoroughly.
  4. Assemble the Toffee: Pour the hot caramel over the pecans in the baking dish, spreading evenly. Let it sit about 2 minutes, then sprinkle chocolate chips over the caramel. Cover the dish with foil or baking sheet to let the chocolate melt.
  5. Finish and Chill the Toffee: After 4 minutes, remove cover and swirl melted chocolate with a knife or spatula to make a decorative pattern. Sprinkle additional chopped pecans and optionally flaked sea salt on top. Let cool completely for 4 hours at room temperature or refrigerate to speed up setting.
  6. Cut and Serve the Toffee: Lift toffee from the dish using parchment paper. Cut or break into pieces. Serve and enjoy your delicious homemade classic Christmas toffee!

Notes

  • Use a candy thermometer for precise temperature control to achieve perfect toffee texture.
  • Pecans or almonds can be substituted depending on preference or availability.
  • Covering the chocolate allows it to melt smoothly without direct heat.
  • Allow the toffee to cool completely before cutting to ensure clean pieces.
  • Store in an airtight container at room temperature for up to 2 weeks.
  • Flaked sea salt adds a nice contrast to the sweetness but is optional.
