For the Chimichurri Sauce

  • 1/2 cup fresh cilantro
  • 1 shallot, roughly chopped
  • 1 jalapeno, seeded and finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup white vinegar or fresh lime juice
  • 1 Tbsp fresh oregano, chopped
  • 2/3 cup olive oil
  • 1/4 tsp black pepper
  • 1/4 to 1/2 tsp red pepper flakes (optional)
  • 1 tsp sea salt, to taste

Beef Sliders

  • 1 pound ground beef
  • 3 Tbsp chimichurri sauce, plus more for serving
  • 6 to 8 slices pepper jack cheese
  • 1 to 2 large ripe avocados, sliced
  • Mixed greens
  • 10 slider buns, toasted

Instructions

  1. Prepare the Chimichurri Sauce: Add all ingredients except for the olive oil into a blender or food processor. Blend on a low speed to finely chop the herbs, garlic, shallot, jalapeno, and oregano. Slowly stream in the olive oil while the machine is running until the sauce reaches a smooth yet slightly chunky consistency. Transfer chimichurri to a jar, seal, and refrigerate. The sauce keeps fresh for up to 1 week.
  2. Season the Beef: Place the ground beef into a mixing bowl and add 3 tablespoons of prepared chimichurri sauce. Season with sea salt and black pepper to taste. Use your hands to thoroughly mix the chimichurri and seasonings into the beef, ensuring even distribution without overmixing.
  3. Form Patties and Cook: Preheat a cast iron skillet over medium-high heat. Form the beef into 10 small slider-sized patties, ideally using a cookie scoop for uniform size. Place the patties in the hot skillet. Cook for about 2 to 3 minutes on the first side, until juices appear and the bottom is crispy and firm.
  4. Flip and Add Cheese: Flip the patties and cook for an additional 30 seconds to 1 minute. Then add pepper jack cheese slices on top of each patty. Continue cooking until the cheese melts and patties reach desired doneness, ideally medium-rare for best flavor.
  5. Toast the Buns: While the patties cook, place slider buns cut side up on a baking sheet. Toast them under the oven broiler just until golden and crisp. Optionally, spread butter on the buns before toasting for enhanced flavor.
  6. Assemble the Sliders: Layer mixed greens on the bottom half of each toasted bun, place a chimichurri beef patty on top, add sliced avocado, and drizzle additional chimichurri sauce over the filling. Cap with the top bun and serve immediately.
