Ingredients

Scale

Chicken and Seasonings

  • 2 tablespoons olive oil (Costabile Brand)
  • 1 ½ lb Springer Mountain Farms chicken breast
  • 1 ½ teaspoon paprika (OliveNation)
  • 1 ½ teaspoon oregano
  • 1 teaspoon garlic powder (OliveNation)
  • ½ teaspoon thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Pasta

  • 12 oz gluten free farfalle pasta
  • ¼ cup reserved pasta water

Sauce

  • 4 tablespoons butter
  • 2 teaspoons dry shallots
  • 1 teaspoon garlic powder
  • 2 teaspoons Italian seasoning
  • ½ cup chicken broth
  • 2 tablespoons Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan cheese
  • ½ teaspoon salt

Instructions

  1. Boil Pasta: In a large pot, boil the gluten-free farfalle pasta according to package directions until al dente. Reserve ¼ cup of pasta water before draining.
  2. Mix Chicken Seasonings: Combine paprika, oregano, garlic powder, thyme, salt, and black pepper in a small bowl to create a seasoning blend.
  3. Prepare Chicken: Pound the chicken breasts slightly to an even thickness. Season both sides of the chicken thoroughly with the seasoning mix.
  4. Sear Chicken: Heat olive oil in a large skillet over medium heat. When hot, sear the seasoned chicken breasts for 5 minutes on each side until browned.
  5. Cook Chicken Through: After searing both sides, reduce heat to medium-low, cover the skillet with a lid, and cook the chicken for an additional 10-12 minutes until the internal temperature reaches 165°F (74°C). Remove chicken from skillet and transfer to a cutting board.
  6. Make Sauce Base: Add butter to the same skillet and melt over medium heat. Stir in dry shallots, garlic powder, and Italian seasoning, then simmer for one minute to release flavors.
  7. Create Roux: Add gluten-free flour to the butter mixture, stirring well and scraping the bottom of the pan to incorporate and prevent sticking.
  8. Add Liquids: Pour in chicken broth and heavy cream, whisking continuously until the sauce is smooth and creamy.
  9. Incorporate Cheese: Add shredded parmesan cheese to the sauce, stirring until fully melted and combined. Cook while stirring occasionally until the sauce thickens to your desired consistency.
  10. Combine Pasta and Sauce: Toss the cooked pasta into the sauce to coat evenly. Add reserved pasta water one tablespoon at a time to loosen the sauce as needed.
  11. Serve: Slice the cooked chicken breasts and mix them into the pasta. Stir gently to combine. Serve immediately while hot.

Notes

  • Make sure to reserve pasta water before draining as it helps adjust sauce consistency.
  • Use a meat thermometer to ensure chicken is cooked safely to 165°F.
  • Gluten-free flour and pasta make this dish suitable for gluten intolerant individuals.
  • This recipe can be adjusted to use regular pasta if gluten is not a concern.
  • Leftover chicken can be stored separately and added when reheating to prevent dryness.
  • Use freshly grated parmesan for the best texture and flavor.
