Chicken
- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
Sandwich Filling
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 1 small red onion, thinly sliced
- 1 tomato, sliced
Bread & Condiments
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
For Grilling
- Butter or olive oil for grilling
- Season and Cook Chicken: Season the chicken breasts on both sides with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken breasts for 6–7 minutes on each side, or until fully cooked through. Remove from heat and let rest for 5 minutes before slicing thinly.
- Prepare Vegetables and Cheese: Slice the avocado, thinly slice the red onion, and slice the tomato. Set these aside along with the cheese slices.
- Assemble Sandwiches: Spread mayonnaise evenly over each slice of bread. Then spread Dijon mustard on top of the mayonnaise. On two slices of bread, layer the sliced chicken, avocado, cheese, red onion, and tomato. Top with the remaining bread slices, mayo side down.
- Grill the Sandwich: Heat a skillet or grill pan over medium heat. Add butter or olive oil to coat the pan. Place the assembled sandwiches on the skillet and cook for 3–4 minutes per side, pressing gently with a spatula to ensure even grilling and melting of the cheese, until the bread is golden brown and the cheese has melted.
- Serve: Remove the sandwiches from the skillet. Let them cool for about one minute, then slice each sandwich in half. Serve warm and enjoy.
Notes
- You can use any cheese you prefer, such as Swiss, cheddar, or provolone, depending on your taste.
- For extra flavor, consider adding fresh herbs like basil or cilantro inside the sandwich.
- Use a hearty bread like sourdough or ciabatta to prevent sogginess from the avocado and tomatoes.
- Make sure to press gently while grilling to help the cheese melt uniformly and the sandwich hold together.
- If you prefer, substitute mayonnaise with a lighter spread or Greek yogurt to reduce calories.
- Leftover cooked chicken can be used to save time.
