For the Rice Krispie Treats:

  • 6 cups Rice Krispies cereal
  • 6 tablespoons unsalted butter
  • 16 ounces mini marshmallows
  • 1 ½ tablespoons cherry gelatin powder (JELL-O, not sugar-free)

For Topping:

  • 10 ounces Ghirardelli dark chocolate melting wafers
  • Sprinkles (optional)

Instructions

  1. In a large saucepan, melt the 6 tablespoons unsalted butter and 16 ounces mini marshmallows over low heat, stirring constantly until fully melted.
  2. Add the 1 ½ tablespoons cherry gelatin powder and mix until smooth.
  3. Gently fold in the 6 cups Rice Krispies cereal until well combined.
  4. Press the mixture into a buttered 13×9 baking dish (or a 9-inch square pan for thicker treats) using a greased piece of wax paper or spatula.
  5. Melt the 10 ounces of dark chocolate wafers and spread evenly over the top.
  6. Let the treats set for about one hour.
  7. Once set, cut into squares and enjoy! Store in a covered container.
