Instructions

  1. Cook the ground beef: Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks to ensure even cooking.
  2. Sauté onion and garlic: Add the chopped onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes until the onion softens and releases a fragrant aroma.
  3. Add potatoes and seasonings: Stir in the diced potatoes, then season with salt, black pepper, paprika, and dried oregano. Mix everything well to coat the potatoes evenly with the spices.
  4. Simmer with broth: Pour in the beef broth and cover the skillet with a lid. Reduce heat to low and cook for 20-25 minutes, stirring occasionally, until the potatoes are tender and most of the broth has been absorbed.
  5. Melt the cheese: Sprinkle the shredded cheddar cheese evenly over the beef and potatoes. Cover the skillet again and cook for 2-3 minutes on low heat, allowing the cheese to melt fully.
  6. Garnish and serve: Remove from heat, sprinkle with freshly chopped parsley for a burst of color and flavor, and serve immediately while warm.
