A hearty and comforting dish combining savory ground beef, tender potatoes, and melted cheddar cheese, seasoned with aromatic spices and fresh parsley. Perfect for a satisfying weeknight dinner.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 tablespoon fresh parsley, chopped

Seasonings and Liquids

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 cup beef broth
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the Ground Beef: Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks to ensure even cooking and crumbled texture.
  2. Sauté Onion and Garlic: Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for 3-4 minutes until the onion becomes soft and fragrant, enhancing the flavor base of the dish.
  3. Add Potatoes and Seasonings: Stir in the diced potatoes, and sprinkle salt, black pepper, paprika, and dried oregano. Mix well to coat the potatoes evenly with the spices.
  4. Simmer with Broth: Pour the beef broth into the skillet and cover it with a lid. Lower the heat to low and cook for 20-25 minutes until the potatoes become tender and most of the liquid has evaporated, allowing flavors to meld.
  5. Melt the Cheese: Sprinkle shredded cheddar cheese evenly over the beef and potatoes. Cover the skillet again and cook for an additional 2-3 minutes or until the cheese melts into a gooey topping.
  6. Garnish and Serve: Remove from heat and sprinkle chopped fresh parsley on top for a burst of color and freshness before serving hot.

Notes

  • Use Yukon Gold or Russet potatoes for best texture when cooking.
  • Adjust seasoning according to taste, especially salt and paprika.
  • For a spicier twist, add a pinch of cayenne pepper or chili flakes.
  • This dish reheats well and can be stored in the refrigerator for up to 3 days.
  • Ground turkey or chicken can be used as a leaner alternative to beef.
