Ingredients

Scale

Dough

  • 75 ml water
  • 200 ml milk
  • 15 g honey
  • 9 g instant yeast
  • 1 egg
  • 30 ml sunflower oil
  • 600 g flour
  • 8 g salt
  • 25 g butter

Topping

  • 40 g Parmesan cheese
  • 2 g cayenne powder
  • 1.5 g onion powder
  • 1 g black pepper powder

Chicken Mixture

  • 700 g chicken filet
  • 5 g salt
  • 3 g onion powder
  • 3 g garlic powder
  • 4 g cayenne powder
  • 1.5 g black pepper powder
  • 15 g sambal oelek
  • 10 ml soy sauce
  • 1 egg

Instructions

  1. Prepare the Dough: In a large bowl, combine water, milk, honey, and instant yeast. Let it sit for 5 minutes to activate the yeast. Then add the egg, sunflower oil, flour, salt, and softened butter. Knead the mixture until a smooth elastic dough forms. Cover and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  2. Prepare the Chicken Mixture: Cut the chicken filet into small pieces or finely chop. In a bowl, mix chicken with salt, onion powder, garlic powder, cayenne powder, black pepper powder, sambal oelek, soy sauce, and the egg. Stir until well combined to create a spicy, flavorful filling.
  3. Shape the Buns: Once the dough has risen, punch it down and divide into 14 equal portions. Roll each portion into a small flat circle. Place a spoonful of the chicken mixture in the center of each and fold the dough around it, sealing carefully to enclose the filling fully. Place the buns seam side down onto a baking tray lined with parchment paper.
  4. Second Rise: Cover the shaped buns with a clean towel and let them rise for another 30 to 40 minutes until puffy.
  5. Prepare the Topping: In a small bowl, mix Parmesan cheese with cayenne powder, onion powder, and black pepper powder to create a spicy cheesy topping.
  6. Bake the Buns: Preheat the oven to 190°C (375°F). Brush the buns lightly with egg wash (optional for a shiny finish). Sprinkle the prepared spicy Parmesan mixture evenly over the buns. Bake in the preheated oven for 20 to 25 minutes until golden brown and cooked through.
  7. Cool and Serve: Let the buns cool slightly on a wire rack before serving to allow the filling to set a bit. Enjoy warm for the best taste and texture.

Notes

  • Ensure the chicken is finely chopped or minced for easier filling and even cooking inside the buns.
  • Adjust cayenne and sambal oelek amounts to control the spiciness level according to your preference.
  • Use fresh yeast if possible, but instant yeast works well and saves time.
  • For a dairy-free version, substitute milk and butter with plant-based alternatives.
  • Store leftover buns in an airtight container and reheat before serving to maintain softness.
