  • 1 tbsp Dijon mustard
  • 8 oz white cheddar cheese, grated
  • 2 cups whole milk
  • 12 tbsp fresh thyme
  • 1 tsp crushed red pepper flakes

Instructions

  1. Prepare seasoning mixture: In a small bowl, combine dry mustard, dried thyme, dried oregano, salt, and freshly ground black pepper. Set aside.
  2. Season chicken: Slice chicken breasts into thin strips or cut into 1-inch cubes. Sprinkle with the prepared seasoning mixture evenly.
  3. Cook chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for several minutes until browned and cooked through. Transfer the chicken to a plate and set aside.
  4. Cook pasta: Bring a large pot of salted water to boil. Add rotini pasta and cook according to the package instructions until al dente. Drain and set aside.
  5. Make roux and sauté aromatics: In the same skillet used for chicken, melt the butter over medium heat. Stir in flour and cook for 1-2 minutes to form a roux.
