  • 2 (1 oz.) boxes sugar-free vanilla instant pudding mix

Roll Up and Coating

  • 45 large tortillas, room temperature
  • 23 Tablespoons unsalted butter, melted
  • ½ cup sugar
  • 1 teaspoon cinnamon (or to taste)

Instructions

  1. Prepare Whipped Cream: Beat chilled heavy cream until soft peaks form, then add 2.5 tablespoons powdered sugar and continue to beat until stiff peaks form. Set aside this whipped cream for the filling.
  2. Make Cheesecake Base: In a large bowl, cream together the softened butter, cream cheese, vanilla extract, and powdered sugar until smooth and fully combined.
  3. Incorporate Whipped Cream: Gently fold the prepared whipped cream into the cream cheese mixture, ensuring even incorporation without deflating the whipped cream.
