  • 5 strips bacon, chopped
  • 1 pound lean ground beef
  • 4 tablespoons butter
  • 1 cup heavy cream

  • 2 medium carrots, chopped
  • 1 tablespoon minced garlic (about 3 cloves)
  • 1 pound Russet potatoes (about 2 large), peeled and diced

Instructions

  1. Cook the bacon. In a large pot over medium-high heat, cook the chopped bacon until crispy, about 10 minutes. Reduce heat if necessary to prevent burning. Remove bacon and place on paper towels to drain.
  2. Brown the ground beef. In the same pot, add the ground beef and cook for 4-5 minutes, breaking it up until fully browned and no longer pink. Transfer to a bowl and drain excess fat.
  3. Sauté the vegetables. Melt butter in the pot, then add chopped onion, celery, and carrots. Cook for 4-5 minutes until softened. Add minced garlic and cook for another 30 seconds to release its aroma.
  4. Add flour. Stir in the all-purpose flour until fully incorporated, which will help thicken the soup later.
  5. Combine liquids and ingredients. Gradually whisk in chicken broth to avoid lumps. Stir in heavy cream, yellow mustard, diced potatoes, and the cooked ground beef.
  6. Simmer the soup. Bring the mixture to a boil, then reduce heat to medium-low. Partially cover and let simmer for 15 minutes until potatoes are tender and flavors meld.
  7. Finish the soup. Remove from heat and stir in shredded cheddar cheese and fresh lemon juice. Adjust the thickness by adding extra chicken broth or cream if needed.
  8. Season and serve. Season with salt and pepper to taste. Ladle soup into bowls and garnish with the crispy bacon strips. Serve hot and enjoy!
