Puff Pastry
- 1 (17.3 oz.) package puff pastry, thawed in the fridge overnight
Caramelized Onions
- 2.5 pounds white or yellow onions, halved, then sliced 1/8″ thick
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 teaspoon granulated sugar
- 1 tablespoon dry white wine
- Kosher salt, to taste
Toppings & Finishes
- 1 egg, beaten (for egg wash)
- 9 oz. fig jam
- 5 oz. crumbled blue cheese
- 2 teaspoons fresh thyme leaves
- Honey, for drizzling
- Heat Butter and Oil: Heat the butter and olive oil in a large pot over medium heat, preparing the pan for caramelizing the onions.
- Add Onions and Salt: Stir the sliced onions in the pot to coat with oil and cook for 10 minutes. Then, add a pinch of kosher salt to aid in drawing out moisture.
- Continue Cooking Onions: Cook onions for a total of 60 minutes, stirring every 4-5 minutes. After 30 minutes, reduce heat to medium-low to help slowly caramelize.
- Add Sugar: At 40 minutes into cooking, add 1 teaspoon granulated sugar to enhance the caramelization and sweetness. Continue stirring frequently.
- Deglaze with Wine: When the onions reach a rich dark brown after 60 minutes, pour in 1 tablespoon white wine and deglaze the pan by scraping the browned bits off the bottom. Set aside.
- Preheat Oven: As the onions finish cooking, preheat the oven to 400°F (200°C) to prepare for baking the tarts.
- Prepare Puff Pastry: Unroll both sheets of thawed puff pastry and cut along the seams into 6 rectangles total, then cut each rectangle into 3 squares, making 18 squares overall.
- Score the Tart Crust: Use a knife to score a half-inch border around the edge of each puff pastry square to create a crust edge.
- Arrange on Baking Sheets: Transfer the squares about an inch apart onto two parchment paper-lined baking sheets.
- Apply Egg Wash: Brush the outer crust edges of each tart square with beaten egg to promote browning.
- Add Fig Jam: Spread about 1 teaspoon of fig jam in the center of each tart square.
- Top with Caramelized Onions: Add 1 teaspoon of caramelized onions on top of the fig jam.
- Add Blue Cheese: Sprinkle 1 teaspoon of crumbled blue cheese over the onions on each tart.
- Bake Tarts: Bake the assembled tarts in the preheated oven for 18-20 minutes, or until the puff pastry is dark golden brown and fully puffed.
- Finish and Serve: Remove from oven, sprinkle fresh thyme leaves over each tart and drizzle with honey. Serve warm or at room temperature.
Notes
- You can substitute yellow onions with sweet onions for a milder flavor.
- Be patient with the caramelization process; stirring regularly prevents burning and ensures even cooking.
- Use cold puff pastry and handle it as little as possible to maintain flakiness.
- Store leftovers in an airtight container and reheat in the oven to retain crispness.
- This recipe can be doubled or halved easily depending on the number of servings needed.
