Instructions

  1. Make the Granola: Preheat your oven to 325°F (163°C). In a large bowl, combine oats, cinnamon, nutmeg, salt, shredded coconut, and chopped pecans. Add olive oil, maple syrup, vanilla extract, and almond butter. Mix well until all ingredients are evenly coated. Spread the mixture evenly on a parchment-lined baking sheet. Bake for about 20-25 minutes, stirring halfway through, until golden brown and crisp. Remove from oven and let cool.
  2. Prepare the Nectarines: While the granola bakes, slice the nectarines into even wedges. Toss the slices with sugar in a bowl and let them sit for 10 minutes to draw out their natural juices.
  3. Roast the Nectarines: Line a baking sheet with parchment paper. After the nectarines have rested, spread them evenly on the baking sheet. When the granola is finished, increase the oven temperature to 400°F (204°C). Once preheated, roast the nectarines for 12-14 minutes, or until they are juicy and tender when pierced with a fork.
