Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and nutmeg.
  2. In a medium bowl, whisk together buttermilk, eggs, vanilla, and melted butter.
  3. Pour wet ingredients into dry ingredients and gently fold to combine. Do not overmix.
  4. Let the batter rest for 10–15 minutes at room temperature.
  5. Heat vegetable oil in a deep pot to 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil.
  7. Fry 2–3 minutes per side, until golden brown.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Repeat with remaining batter, maintaining oil temperature.
  10. Dust warm beignets with powdered sugar.
