Crust:

  • 2 cups of all-purpose flour
  • 4 tablespoons of icing sugar
  • 1 cup of cold, unsalted butter (cut into small cubes)
  • 12 tablespoons of cold water (optional)

Filling:

  • ½ cup of unsalted butter
  • 3 cups of brown sugar
  • 4 large eggs
  • 12 tablespoons of white vinegar
  • 1 tablespoon of vanilla extract
  • Optional: ¾ cup of raisins

Instructions

  1. Get your pan ready – Line a 9×13 inch pan with parchment paper and spray it with cooking spray.
  2. Preheat the oven – Preheat oven to 350°F (175°C).
  3. Make the Crust
    • Mix the crust ingredients – Combine flour and icing sugar in a bowl. Add butter cubes.
    • Cut in the butter – Use a pastry cutter to mix until butter is pea-sized. Add water if needed.
    • Press it into the pan – Press crust mixture into the pan evenly.
    • Bake it – Bake crust for 10 minutes.
  4. Make the Filling
    • Melt the butter – Melt butter in a bowl.
    • Add the rest of the filling ingredients – Whisk in brown sugar until smooth. Add eggs, vinegar, vanilla, and raisins (if using).
  5. Put It All Together
    • Pour the filling over the crust – Pour filling onto baked crust.
    • Bake again – Bake for 25-30 minutes until filling is set with a slight jiggle.
