Indulge in this luscious Blueberry Delight dessert that combines a buttery graham cracker and pecan crust with layers of creamy cheese filling and sweet blueberry topping. Perfect for gatherings or a delightful treat at home.

Graham Cracker Crust:

  • 1 (140 g) sleeve graham crackers, (9 sheets)
  • 1 cup (112 g) pecans
  • ½ cup (113 g) butter, (1 stick) melted
  • 2 Tbsp granulated sugar

Cream Cheese Filling:

  • 8 oz (226 g) cream cheese, room temperature
  • 1 cup (120 g) powdered sugar
  • 16 oz (453 g) whipped topping, (two 8oz tubs) thawed & divided

Blueberry Topping:

  • 42 oz (1190 g) blueberry pie filling, (two 21oz/595g cans)
  • 2 Tbsp chopped pecans, for garnish (optional)

Instructions

  1. Graham Cracker Crust: Preheat oven to 350 degrees Fahrenheit. Blend graham crackers and pecans until fine crumbs. Add melted butter and sugar, press into a 13×9-inch pan. Bake for 8-10 minutes, then cool.
  2. Cream Cheese Filling: Beat cream cheese and powdered sugar until smooth. Mix in one container of whipped topping and spread over the crust.
  3. Assembly: Dollop blueberry pie filling over the cream cheese layer, top with remaining whipped topping, and sprinkle with pecans.
  4. Chill: Cover and refrigerate for 2 hours or overnight. Cut into 15 pieces and serve chilled.

Notes

  • You can also make a no-bake crust by pressing the crumb mixture into the pan and chilling it instead of baking.
