For the Cheesecake Filling:

  • 1/2 cup rolled oats (optional)
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2 cups fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Make the crust: In a large bowl, whisk together flour, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Press the crumb mixture evenly into the bottom of the pan. Bake for 10-12 minutes, or until lightly golden brown.
  3. Make the cheesecake filling: Beat together cream cheese and sugar until smooth. Beat in the egg, vanilla extract, and sour cream until well combined.
  4. Assemble the bars: Spread the cheesecake filling over the cooled crust. Top with fresh blueberries.
  5. Make the crumble topping: Whisk together flour, oats, brown sugar, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the crumble topping evenly over the blueberries.
  6. Bake for 35-40 minutes, or until golden brown and slightly set.
  7. Cool and serve: Let the bars cool completely in the pan, then refrigerate for at least 2 hours. Cut into squares and enjoy!
