Banana Bites
- 2 ripe bananas, sliced into 3/8” to 1/2″ thick slices
- 1/2 cup creamy peanut butter
Chocolate Coating
- 1 cup milk chocolate candy wafers (or dark chocolate chips/almond bark)
- Slice Bananas: Slice the bananas into 3/8″ to 1/2″ thick pieces to create the base for the snack.
- Assemble Bites: Spread a generous smear of peanut butter on one banana slice and sandwich it with another banana slice, forming a peanut butter-filled banana bite.
- Freeze Bites: Place the banana bites onto parchment paper and freeze just until they are firm and the peanut butter sticks the slices together. This step makes them easier to handle during chocolate coating.
- Melt Chocolate: While the banana bites are chilling in the freezer, gently melt the chocolate wafers or your chosen chocolate coating using a microwave or double boiler until smooth.
- Coat Bites in Chocolate: Using a toothpick, spear each frozen banana bite and dip it completely into the melted chocolate. Place the coated bites onto another parchment-lined baking sheet.
- Set in Freezer: Freeze the chocolate-coated banana bites until the chocolate is firm, and enjoy your frozen snack immediately or store for later.
Notes
- Use ripe but firm bananas for best texture.
- You can use dark chocolate or white chocolate as an alternative coating.
- For easier handling, freeze banana bites on parchment paper to prevent sticking.
- Store the finished bites in an airtight container in the freezer for up to 2 weeks.
- Peanut butter alternatives, like almond or cashew butter, can be used for variation or allergies.
