Ingredients

Scale

Liquid and Dairy

  • 350 g cold milk
  • 397 g sweetened condensed milk (1 can)
  • 470 g whipping cream

Dry Ingredients

  • 102 g instant vanilla pudding mix (1 package)

Fruits

  • 4 large ripe bananas

Cookies

  • 26 Biscoff cookies

Instructions

  1. Prepare the pudding base: In a medium bowl, whisk together the cold milk, sweetened condensed milk, and instant vanilla pudding mix until the pudding mix is fully dissolved. Place the mixture in the refrigerator to set while preparing the whipped cream.
  2. Whip the cream: In a large mixing bowl, pour the whipping cream. Using an electric hand mixer with the whisk attachment, whip the cream until stiff peaks form, ensuring a light and airy texture.
  3. Combine pudding with whipped cream: Gently fold the chilled pudding mixture into the whipped cream using a spatula. Continue folding carefully until fully combined and no streaks remain, maintaining the lightness of the whipped cream.
  4. Layer the pudding: Spoon half of the pudding mixture into a 9×13-inch dish and spread evenly with a spatula to create the first layer.
  5. Add bananas and cookies: Slice the bananas into ¼-inch thick rounds. Arrange about three-quarters of the banana slices evenly over the pudding layer. Crumble approximately 18 Biscoff cookies and sprinkle them over the bananas for a crunchy texture.
  6. Top with remaining pudding: Add the remaining pudding mixture on top of the banana and cookie layer, spreading it out evenly with a spatula to create the third layer.
  7. Garnish: Finish by topping the pudding with the remaining Biscoff cookies and banana slices as a decorative garnish. If you plan to serve within 1-2 days, wait to add the final banana slices just before serving to prevent browning.
  8. Chill and serve: Cover the dish tightly and chill the Biscoff Banana Pudding in the refrigerator for at least 2 hours or preferably overnight to allow flavors to meld. Serve directly from the dish or portion into smaller containers for presentation.

Notes

  • You can substitute full-fat milk with low-fat milk to reduce calories, but the pudding may be slightly less creamy.
  • To prevent bananas from browning, add the last layer of banana slices right before serving if the pudding is refrigerated for more than a day.
  • Ensure the whipped cream is at stiff peak stage before folding to maintain a fluffy texture.
  • For a stronger Biscoff flavor, sprinkle additional cookie crumbs between layers if desired.
  • The pudding can be made a day ahead for best flavor and texture.
