4.6 from 90 reviews

Beyti Kebab is a traditional Turkish dish featuring seasoned ground lamb or beef shaped into long kebabs, baked to perfection, and wrapped in warm lavash bread. This dish is flavorful and aromatic, combining spices like cumin and paprika with fresh parsley and garlic, making it a perfect savory meal served with yogurt or tomato sauce.

Ingredients

Scale

Meat Mixture

  • 1 lb ground lamb or beef
  • 1 medium onion, grated
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper

Bread and Serving

  • 4 pieces lavash bread
  • Yogurt or tomato sauce, for serving

Instructions

  1. Prepare the Meat Mixture: In a large bowl, combine the ground lamb or beef with the grated onion, minced garlic, chopped parsley, cumin, paprika, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Shape the Kebabs: Form the meat mixture into long cylindrical kebabs, approximately six inches in length and one inch wide. Place the shaped kebabs on a baking sheet lined with parchment paper to prevent sticking.
  3. Bake the Kebabs: Preheat your oven to 400°F (200°C). Bake the kebabs for 20 to 25 minutes, or until they are golden brown and cooked through, ensuring an even texture and flavor.
  4. Warm the Lavash: Gently warm the lavash bread in a skillet over low heat or briefly in the microwave until soft and pliable, making it easier to wrap around the kebabs.
  5. Assemble and Serve: Once the kebabs are cooked, wrap each one tightly in the warm lavash bread. Serve immediately with your choice of yogurt or tomato sauce for dipping or drizzling.

Notes

  • You can use either ground lamb or beef depending on your preference; lamb will provide a more traditional flavor.
  • For added moisture, you can add a tablespoon of olive oil to the meat mixture.
  • If lavash bread is unavailable, thin flatbreads or tortillas can be used as alternatives.
  • Adjust the spices according to your taste for mild or more robust seasoning.
  • Yogurt sauce can be made by mixing plain yogurt with a squeeze of lemon and a pinch of salt for a refreshing accompaniment.
