Crust
- 1½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
Cheesecake Filling
- 16 oz (450 g) cream cheese, room temperature
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- ½ cup sour cream, room temperature
Peach Cobbler Topping
- 1½ cups fresh peaches, peeled & sliced
- ½ cup all-purpose flour
- ½ cup granulated sugar
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 6 Tbsp cold unsalted butter, cut into small pieces
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Make the crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until evenly moistened. Press the mixture into the bottom of the prepared pan.
- Make the cheesecake filling: In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract and sour cream. Pour the cheesecake filling over the crust.
- Make the peach cobbler topping: In a separate bowl, combine sliced peaches, flour, sugar, cinnamon, and nutmeg. Toss gently to coat. Sprinkle the peach mixture evenly over the cheesecake filling. Dot the top with cold butter pieces.
- Bake for 45-50 minutes, or until the cheesecake is set and the topping is golden brown. Let cool completely before cutting into bars.
