Chicken:

  • 4 boneless, skinless chicken breasts

Marinade:

  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Garnish:

  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Prepare Marinade: In a medium mixing bowl, combine balsamic vinegar, olive oil, honey, minced garlic, oregano, and thyme. Whisk until well blended.
  2. Marinate Chicken: Season marinade with salt and pepper. Place chicken in a bag, pour marinade over, seal, and refrigerate for 30 minutes to 4 hours.
  3. Preheat Oven: Preheat to 400°F (200°C).
  4. Prepare Chicken: Remove from fridge, let sit, then place in a greased baking dish. Pour remaining marinade over chicken.
  5. Bake: Bake for 25-30 minutes, or until internal temp reaches 165°F (75°C). Baste halfway through if desired.
  6. Rest and Serve: Let chicken rest, slice, drizzle with pan juices, and garnish with basil. Serve with sides.
  7. Storage: Store leftovers in the fridge for up to 3 days. Reheat before serving.
