Ingredients

Scale

For the Marinade:

  • 1 cup water
  • 1/3 cup teriyaki sauce
  • 1/2 cup lime juice
  • 3 garlic cloves, minced
  • 1 teaspoon tequila
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger

For the Dressing:

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons chunky and spicy salsa
  • 1 tablespoon milk
  • 1 teaspoon Cajun blackened spice mix
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon hot sauce
  • 1/8 teaspoon dried dill weed

For the Chicken:

  • 1 pound boneless, skinless chicken breast
  • 1 cup shredded Colby-Monterey Jack cheese
  • 2 cups corn chips, crushed

Instructions

  1. Prepare the Marinade: In a large bowl, thoroughly combine water, teriyaki sauce, lime juice, minced garlic, tequila, liquid smoke, salt, and ground ginger to create a flavorful marinade.
  2. Marinate the Chicken: Place the boneless, skinless chicken breasts into the marinade, coating them completely. Cover and refrigerate for at least 2 hours to allow the flavors to meld and tenderize the chicken.
  3. Make the Dressing: In a separate bowl, mix together mayonnaise, sour cream, chunky and spicy salsa, milk, Cajun blackened spice mix, dried parsley, hot sauce, and dried dill weed until smooth. Cover and chill in the refrigerator until ready to use.
  4. Preheat the Grill: Heat your grill to medium-high, about 375-450°F (190-232°C), ensuring it is clean and well-oiled to prevent sticking.
  5. Grill the Chicken: Remove chicken from the marinade and grill for 3-5 minutes on each side, or until the internal temperature reaches 165°F (74°C), indicating the chicken is fully cooked and juicy.
  6. Top with Dressing and Cheese: Brush the grilled chicken breasts generously with the prepared dressing. Then sprinkle the shredded Colby-Monterey Jack cheese evenly over the top of each piece.
  7. Broil until Cheese Melts: Transfer the chicken to a broiler-safe pan and broil in the oven until the cheese is melted, bubbly, and slightly golden, about 2-4 minutes.
  8. Serve: Place the chicken breasts on a bed of crushed corn chips or alongside corn chips for added crunch and serve immediately while hot. Enjoy the fiesta flavors!

Notes

  • Marinate the chicken for at least 2 hours, but overnight will enhance flavor further.
  • Make sure to use a meat thermometer to ensure the chicken is cooked to a safe internal temperature of 165°F (74°C).
  • If you don’t have a grill, you can bake the chicken in the oven at 400°F (204°C) for 20-25 minutes.
  • Adjust the amount of hot sauce in the dressing to control heat level.
  • For a gluten-free version, verify the teriyaki sauce and Cajun seasoning are gluten-free.
  • Leftover chicken can be frozen for up to 2 months.
