Ingredients

Scale

Cake

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 ½ cups vegetable oil
  • 1 ½ cups granulated sugar
  • ½ cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 4 cups peeled and chopped apples (½-inch chunks)

Glaze

  • 1/3 cup butter
  • 1/3 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1/3 cup heavy cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 325°F (163°C). Grease a 9×13-inch baking pan with non-stick cooking spray and set it aside to ensure your cake won’t stick.
  2. Mix Dry Ingredients: In a medium bowl, sift together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt. Set this mixture aside for use later.
  3. Cream Wet Ingredients: In a large mixing bowl, use an electric mixer on medium speed to beat together the vegetable oil, granulated sugar, and brown sugar until well combined. Add the vanilla extract and eggs one at a time, beating well after each addition to create a smooth batter.
  4. Combine Dry and Wet Mixtures: Gradually add the sifted dry ingredients into the wet mixture, mixing thoroughly between each addition. The batter will become very thick, which is expected for this recipe.
  5. Fold in Apples: Using a sturdy wooden spoon, gently fold the peeled and chopped apples into the thick batter until they are evenly distributed.
  6. Bake: Pour and spread the batter evenly into the prepared baking pan. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean, indicating that the cake is fully baked.
  7. Make the Glaze: While the cake bakes, prepare the glaze by placing butter, brown sugar, granulated sugar, heavy cream, and vanilla extract in a medium saucepan. Heat over medium heat, stirring frequently, until the mixture starts to simmer. Remove from heat and let cool for 5 minutes to thicken slightly.
  8. Glaze the Cake: Immediately after removing the cake from the oven, pour the warm glaze over the top evenly, allowing it to soak in and add extra sweetness and moisture.
  9. Slice and Serve: Once glazed, slice the cake into squares and serve warm or at room temperature for the best flavor and texture.

Notes

  • The batter is thick due to the apples and oil, so use a sturdy spoon for folding.
  • Ensure apples are peeled and chopped evenly for consistent texture.
  • You can substitute apple varieties like Granny Smith or Fuji based on preference.
  • For a healthier twist, reduce sugar slightly but keep the glaze as is for moisture.
  • Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 4 days.
  • The glaze can be gently reheated if it solidifies before serving.
