Instructions

  1. Prepare Gelatin: In a medium-sized bowl or a 1-quart measuring cup, add the cold room temperature water and sprinkle the unflavored gelatin powder over it. Stir gently and set aside to allow the gelatin to bloom.
  2. Dissolve Sugar: In a separate bowl or measuring cup, pour the just-boiled water and stir in the ¼ cup sugar until completely dissolved to make a sugar water solution.
  3. Combine Gelatin and Sugar Water: Pour the sugar water into the gelatin mixture and stir thoroughly to dissolve the gelatin fully.
  4. Add Milk and Flavoring: To the combined gelatin mixture, add 1 cup of whole milk and 1 tablespoon of almond extract. Stir well until the mixture is smooth and homogenous.
  5. Set the Jello: Pour the almond gelatin mixture into a dish, preferably a rectangular glass container with a lid. Place the container uncovered in the refrigerator for 1-2 hours to start setting and reduce condensation.
  6. Chill Completely: After initial setting, cover the dish to prevent condensation and refrigerate for at least 4 hours or until the jello is completely set and firm.
  7. Serve: Cut the almond jello into cubes. Serve chilled with canned fruit, fresh fruit, and optionally drizzle with simple syrup.
  8. Optional Simple Syrup Preparation: To prepare simple syrup, combine ¼ cup water with ¼ cup sugar in a pot. Bring to a boil, stirring until sugar is fully dissolved and syrup is clear. Let cool to room temperature before serving. Store leftovers in a jar in the refrigerator.
